Philosophy
Years ago - my wife and I decided to change our lives. The decision had nothing to do with money - nothing to do with career - Our decision had everything to do with doing what we love and NOT doing just what we were good at. Our philosophy, therefore; is to follow our passion... to create a lifestyle for ourselves and our children through the preparation of soul satisfying food - drinking wine and providing ourselves and our friends with a good time!
Years later - the ideal we envisioned for ourselves and our children brings us to Fair Hill - No matter what happens from here on out we will always look back upon our lives as having lived them to the fullest - with passion - with the satisfaction that we created the best possible lifestyle for ourselves and our children.
Vision
It begins with a phrase my father said frequently when I was a child - "Be the best You can be!" It is a phrase that transcends everything around you. Instead of asking ourselves "what are the best in the world doing and how do I compete with them" - the phrase begs you to ask yourself "what am I truly capable of - what are my personal limits and how do I get the most out of myself and those around me."
Our vision is based on the idea of being the best we can be at any given time on any given day. Bringing out the best within anyone and any team takes time, patience, passion, drive and discipline. To this end - we look forward to providing the very best dining experience we can create within the realm of our talent and philosophy. We recognize the "experience" revolves around food, wine, service and ambiance - and every guest places each of these items in a new and unique order every time they visit us.
We truly look forward to providing our guests with the best of us and our collective team to ensure they enjoy their visit.
Our Food
EVERYTHING is made from scratch. Many people may say they make everything from scratch in their own kitchen - we really do!
From baking our own bread - butchering our own meat - creating our own pastry - making our own cheese and cured meats - our passion for food is a true labor of love.
Given the tremendous bounty our surrounding farmland has to offer - we take advantage of this every chance we get - to this end, Fair Hill Inn offers guests a new menu every month based on what is in season. Fresh, local, seasonal ingredients are the basis of our cuisine.
Given the breadth of our regional bounty, our cuisine has no boundries - when asked what type of food we will prepare - our answer is simple "just good food" - In addition, Fair Hill Inn provides guests with the option of, either - a la carte dining - or a 7 course degustation menu. In this regard, a guest can, either, select only those items they wish to enjoy - or they can put their trust in the hands of Chefs Phil and Brian to create a special 7-course degustation menu for them paired with or without wine.
Our Wine
When it comes to wine - we put our passion to the test. Fair Hill Inn offers a wine list with over 500 selections. Our list offers wine from every major growing region in the world. In addition, over 400 of our wines have received a rating of 90 or above from, either, Wine Spectator, Wine Enthusiast, Wine Advocate or Stephen Tanzer or the revered "tre bicchieri" from Gambero Rosso (the preeminent Italian wine authority).
For those wishing to take a tour of our incredible wine cave - please call ahead to schedule an appointment so that we can accommodate your request, either, before or after your meal. Due to strict temperature control and the general nature of our wine cave; we are, unfortunately, unable to allow guests to dine in the cave.
The Wine Bar
Rounding out our passion for wine, we have created an intimate wine bar & lounge for guests to enjoy their favorite beverage.
To further enhance our guests wine experience, we offer over 30 wines by the glass in pre-arranged flights ranging from "World Wide Chardonnay" to "Spanish Reds."
For those looking for other unique libations, we offer a fully stocked bar and several "signature martinis" and "champagne cocktails."
In addition, we offer over 28 single malt scotches and a collection of Armagnacs dating as far back as 1955.
While dinner is not available in our wine bar; we do offer an assortment of light fare items to go perfectly with your wine flight or beverage of choice.
Parties & Lunch
Fair Hill in is open for dinner only Wednesday through Sunday at 5pm. We are Open Tuesday for Private Parties.
Since Chefs Phil and Brian make every item from scratch, we are unable to offer lunch. We will consider private parties and special events on a selective case by case basis. In all instances, it is our absolute commitment to ensure that everything we do at Fair Hill Inn is emblematic of who we are and the dining experience we are committed to providing. In order to guarantee the best possible dining experience for all our guests, we must limit our scope of banquet services available.
